Inspiration: For exquisitely pink meat with a deeply caramelised crust, heat a griddle pan over high heat until very hot. Brush the cutlets with vegetable oil, season with salt, and sear for 2-3 mins on each side (it will depend on the thickness of the cutlet). Remove from the pan and rest for 5 mins before serving.
