The flank comes from the cow's underbelly and is known for its rich, meaty taste and distinctive texture. Also called Bavette, its a versatile cut, often used in tacos, fajitas, stir-fries.
Inspiration: Marinate in a combination of olive oil, garlic, lemon juice and brown sugar for up to 4hrs. Cook hot and fast, rest and then slice against the grain. Serve with smashed potatoes, and a spicy salsa verde for the perfect pairing.
Provenance: These fullblood Angus cattle are raised on pristine natural pastures, before transitioning to a carefully tailored 120-day feeding program in Queensland’s Darling Downs.
