
Dry-Aged Free-Range Northern Rivers Whole Duck - 2kg
Strictly limited: Due to the care required in handling these rare birds, all deliveries or pick-up must be made on Thursday 4th September - Thursday 11th September.
These free-range Pekin/Aylesbury Cross ducks from the Northern Rivers, NSW, are already very special and then we have dry-aged them for 7 days, to deepen flavour and create beautifully crisp skin.
Inspiration: Roast whole with oranges and star anise for a show-stopping centrepiece, or carve into portions to showcase the rich, refined flavour of the breast and legs.
Provenance: These birds are raised in the pristine hinterland of Northern Rivers, NSW on a boutique, family-run farm. The ducks roam freely on rich pastures and clean spring water, and their diet is designed by a specialist nutritionist carefully curated with premium Australian ingredients such as macadamias, blueberries, corn, and seaweed kelp. These are happy, healthy ducks, free from hormones, vaccines, and growth promotants.
Please note: Due to the dry ageing process, this product is not suitable for freezing.
