Our butchers take the bone out for you, so all you have at your table is the delicious smoked ham, with smokey umami flavours from the beechwood chips, and our 3 stage smoking low and slow process. The meat is super soft, sweet-savoury and perfect for carving at your Christmas table. There is a reason this is an award-winning ham.

Inspiration: As the ham is smoked, so it is ready to slice for a snack or sandwich, or to be glazed and prepared for the centrepiece of your Christmas table. Prepare the ham by scoring the fat in diamond cuts so the glaze can seep in. In a pot, bring to a gentle simmer a cup of brown sugar, 2 tablespoons Dijon mustard, 1/4 teaspoon ground cinnamon 1/2 cup of mirin, 1/4 teaspoon ground cloves, 4 cloves garlic, smashed. As soon as it reaches the simmer, lather it on your ham with a pastry brush. Preheat the oven to 160'C and bake in a roasting tray for 1.5 hours. Basting the ham every 30 minutes.

Provenance: For us, the process is simple, one leg, to one ham. We don't use any mixing, tumbling or additives. It is pure porky authentic, whole female leg with our own pickle a recipe handed down over the generations. We apply a 3-stage smoke and rest process using the distinctive Victorian Mountain Ash wood chips which give it the memorable smokey sweet flavour.
