The gizzard, also known as giblets, is the muscular stomach of the duck and loved in French & Asian cooking. It has a ton of proteins and potassium.
Inspiration: You will need to confit the gizzards in duck fat for 1.5 hours at 120'C with thyme, garlic and salt. Remove gizzard from duck fat and let them cool down. Serve with a warm potato salad seasoned with a shallot and parsley vinaigrette.
