Emu Fan Fillet (frozen) 1kg
The most tender premium cut from the inside thigh. Many chefs compare it to a Filet Mignon.
Inspiration: Emu has a beef-like flavour, but its leanness means it benefits from fast, hot cooking and careful resting.
Preheat your oven to 215°C (it needs to be properly hot). Season generously and sear briefly in a hot pan with olive oil and aromatics (rosemary, garlic, thyme all work beautifully). Transfer to the oven and cook for around 12 minutes, then remove and rest well before slicing. Slice thinly across the grain and serve medium-rare for best results.
Provenance: We are pleased to be partnering with the world’s largest emu farm, The Emu Farmers Co, located in Northern Victoria. The emus roam free in lush, green, rotational grazed paddocks and are ethically handled at every part of the process. There is zero-use policy for added hormones growth promotants and the farm is pesticide free. A state of the art licensed processing facility has recently been built on the farm so there is no transportation for the emu which can cause enormous stress and affect the quality of the meat.
