Ravens Creek Free-Range Berkshire Pork Shoulder Roast 2.5kg
Berkshire pork is the Wagyu of the pork world — prized for its juiciness, rich flavour, and exceptional tenderness. Our master butchers have expertly rolled and tied the pork shoulder to help it retain its shape when roasted.
Inspiration: Pat the meat dry and score the skin. Massage a generous handful of salt into the skin, then let it come to room temperature (about 1 hour before cooking). Preheat the oven to 220°C and roast for 20 mins. Then, reduce the heat to 160°C and cook for another 40-60 mins. The crackling should be golden, blistered, and crispy. Allow to rest for a good 10 minutes, then serve.
Provenance: We have partnered with Ravens Creek Farm, located in Moriac (only 22km west from Geelong). Ravens Creek Farm raise true free-range Berkshire pigs without cages or fixed sheds and the farm is completely chemical free.
