THE VICTORIAN 21+ DAYS DRY-AGE BEEF
Our dry-ageing program is driven by time, control, experience and flavour. Each cut is grass-fed and finished on grain with a MB2+ and aged in a carefully controlled environment, allowing natural enzymes to slowly break down muscle fibres to enhance tenderness and deepen flavour. The result is a depth and richness of flavour that simply can’t be rushed.

Our portion-controlled program is designed for kitchens that demand efficiency without compromise. Every steak is tailored, hand-finished, and cut with precision by our expert butchers.
