Sambar is a large, hardy species with a high meat-to-bone ratio and consistent tenderness across the carcass. Free-roaming on Victoria and NSW's alpine grazing lands, the flavour is mild and nutty. Closer to prime beef than gamey, with a depth and complexity that reflects the animal's environment.
