We have a very limited release of these incredible whole emus — and trust us, they're bigger than they look!
Emu meat is the ‘new’ Australian game meat, known for its deep colour and rich flavour. While you might expect it to taste like turkey or other large birds, it's actually closer to beef, with a touch of gamey complexity.
Inspiration: Get ready for a wild culinary adventure. Pan-sear the lean breast fillets like steak, slow-braise the legs for a deep, flavourful ragù or pulled meat, and use the neck and bones for an incredible stock. The mince is perfect for burgers, sausages, or pies, and if you’re feeling bold, try smoking the whole bird or making emu jerky.
Provenance: We're proud to partner with The Emu Farmers Co, the world’s largest emu farm, based in Northern Victoria. These emus roam freely in lush, rotationally grazed paddocks and are ethically handled at every stage. The farm follows a zero-use policy for added hormones and growth promotants and is completely pesticide-free.
