Smoked Ox Tongue

The ox tongue is one of the most highly prized offals in Southeast Asia and is otherwise known as neat’s tongue or beef tongue. Our in-house butchers first brine and then it is triple smoked using the distinctive Victorian Mountain Ash wood chips which gives it a memorable smokey sweet flavour.

Inspiration: Delicious when shaved thinly in a pickled walnut salad or on a charcuterie board.
