For the first time, we’re offering a 7-point rib set with an impressive Marble Score 4. This is your chance to create something truly bespoke. Slice it into individual rib eyes, divide it into 2 or 3-point rib eye roasts, or roast it whole for an unforgettable centrepiece. No saw required — just a sharp butcher’s knife!
Inspiration: For roasting the whole rib set, low and slow in a smoker BBQ or in an oven is the way to go. Bring up to room temperature - take the rib set out of the fridge at least 4 hours before cooking. Cook at 130°C for around 3 hours to achieve medium-rare doneness. Remove from heat when the core temperature reaches 53°C, and let it rest for at least 30 mins. The core temperature will rise to 57°C during the resting time.
For serving, cut into large individual rib eyes, or remove the entire piece off the bone and slice it as a scotch fillet. Make sure to eat the beautiful meat nestled between the bone!
