Pork Belly Porchetta (Rolled & Tied) 4kg
Porchetta is a traditional Italian roast pork but for this version, we have used the succulent pork belly. The fat content of the belly keeps the meat moist when cooked low and slow.
Inspiration: Take the porchetta out of its packaging the day before to let the skin dry in the fridge for 24hrs, it helps for a better crackling. Let the meat reach room temperature before cooking. Place in a roasting tray and slow cook the meat at 160℃ maximum. This large piece will take at least 2.5 hours to cook, maybe more depending on your oven. Serve with sauteed brussels sprouts, roasted potatoes and apple sauce.
