Pork Belly Porchetta Stuffed with Fennel Seeds, Mediterranean Spices and Chilli 2.5kg
Porchetta is a traditional Italian roast pork and for this version, we have used the succulent pork belly. The fat content of the belly keeps the meat moist when cooked low and slow and brings out all the flavours of the Mediterranean spice rub.
Inspiration: Take the porchetta out of its packaging the day before to let the skin dry in the fridge for 24hrs, it helps for a better crackling. Let the meat reach room temperature before cooking. Generously salt the skin and place the meat in a roasting tray. Slow cook the meat at around 160℃. This large piece will take at least 2 hours to cook, maybe more depending on your oven. Serve with sauteed brussels sprouts, roasted potatoes and apple sauce.
