The scotch fillet is one of the most loved cuts for good reason. Generous marbling, a rich fat cap, and the spinalis running along the edge, which many consider the most flavoursome part of the whole animal. Inspiration: Slice into thick steaks and sear hard on a hot BBQ or cast iron, letting the fat render and the edges caramelise. Or roast the whole piece low and slow, then finish with high heat for a golden crust. Rest generously before carving.
