The scotch fillet is one of the most loved cuts for good reason. Generous marbling, a rich fat cap, and the spinalis (cap muscle) running along the edge, which many consider the most flavoursome part of the whole animal. At Marble Score 4, this is premium Angus at its best: deeply flavoured, beautifully tender, and incredibly rewarding to cook.
Inspiration: Slice into thick steaks and sear hard on a hot BBQ or cast iron, letting the fat render and the edges caramelise. Or roast the whole piece low and slow, then finish with high heat for a golden crust. Rest generously before carving.
