Dry Aged Free Range Pork Cutlets (2 x 300g)
Due to the dry ageing process, the product may not last well when frozen, so we advise it is not suitable to be frozen.
This is the 'pièce de résistance' of pork chops. Our strength in dry ageing intensifies the flavour and tenderness, of this already incredibly moist and sweet flavoured meat.
Inspiration: Bring the meat to room temp and pat dry and season lavishly. Have your pan on low to medium heat and add vegetable oil. Place the pork chop in a pan and allow to fat to melt slowly until the meat is golden brown (4-5 minutes). Turn the chop over and cook on low for another 4-5 minutes. If you are patient enough you can then hold the chop on the skin edge to crisp it, it will crackle and be delicious!
