This is the 'pièce de résistance' of pork chops. Our strength in dry ageing intensifies the flavour and tenderness, of this already incredibly moist and sweet flavoured meat.

Inspiration: Bring the meat to room temp and pat dry and season lavishly. Have your pan on high heat and add vegetable oil. When the oil just begins to smoke, place the pork chop in a pan and allow to sear until golden brown (3-4 minutes) and then reduce the heat. Turning the chop, cook on low for another 3-4 minutes.
