The backbone of the whole chicken has been skilfully removed by our in-house butchers, ensuring even cooking and a faster prep time. Butterflying the chicken maximises skin exposure, achieving a delightful crispiness when cooked. This larger surface area allows for optimal absorption of meat rubs, like our Mediterranean or Deep South Meat Rub.
Inspiration: A butterflied chicken makes ideal BBQ material, or you could put it face down in a hot pan to crisp up the skin (5 mins) and finish in an oven at 180'C (about 40 mins). Take your pick.
