Cut from the thigh/rump, the outside fillet is an exceptionally lean, low-fat steak with a mild, earthy flavour that sits between premium beef and venison.
Inspiration: Emu has a beef-like flavour, but its leanness rewards simple, fast cooking. Season generously with salt, sear in a very hot pan until medium-rare, and rest for a few minutes before slicing.
Provenance: We've partnered with the world’s largest emu farm, The Emu Farmers Co, located in Northern Victoria. The emus roam free in rotational grazed paddocks and are ethically handled at every part of the process. There is zero-use policy for added hormones growth promotants and the farm is pesticide free.
