Duck liver is rich & buttery with a delicate flavour.
Inspiration: Season the liver with salt and pepper, sauté in a hot pan with a touch of olive oil, and flambé with brandy towards the end. Serve on a bed of salad with a lovely mustard vinaigrette and you have a light and nutritious meal. It also makes the most wonderful duck pâté if you are keen to try this out!
