Pork Mince Stuffing with Apple, Chestnut, Bacon and Sage 1kg

This combination of pork and stuffing is special, our chefs make the stuffing with coarse pork mince, fresh sage, apple, onion, bacon, and other herbs and spices. With the added benefit of it being gluten-free. You can serve it as a centrepiece with crackling and your roast, or let it cool and serve it as part of a buffet. And come on, who doesn't love slices of pork in sandwiches, days after, with stuffing and apple sauce, yummo! 

Inspiration: Bring the pork to room temperature (1 hr) and pat dry the skin. Liberally massage the salt into the skin and cracks of where we have scored it. Pre-heat the oven at 220'C, and cook for 25 minutes, then lower the temperature to 170'C and cook for a further 30 minutes. Rest for 10-15 minutes and carve.
