This 6kg behemoth isn't for the faint of heart. If you're ready for a big, bold steak with plenty of showmanship, this one's for you. Our master butchers have portioned this colossal transversal cut from the whole leg which include Girello, Knuckle, Topside and Silverside muscles.
We recommend consuming this product within 3 days.
Due to the dry ageing process, the product may not last well when frozen, so we advise it is not suitable to be frozen.
Inspiration: This is the ultimate sharing steak. Marinate in your favourite meat rub and best grilled low and really slow. Serve simply to highlight its flavour from the 42-day dry ageing process.
Provenance: This retired dairy cow spent its life on the lush pastures of Gippsland, Victoria and then we have dry-aged it for 42 days in our state of the art dry ageing room. This is one special sharing steak.
