Whole Duck 2.2kg
A whole roast duck turns any meal into an occasion, with rich, tender meat under golden, crisp skin. A favourite for Sunday roasts, and a showstopper for Thanksgiving, Christmas and Chinese New Year.
Inspiration: Low and slow is the secret. For extra crisp skin, leave the duck uncovered in the fridge overnight to dry out. Set it on a rack over a roasting tin and roast at 160°C, basting regularly, until a meat thermometer in the thickest part of the thigh reads 75°C (about an hour). Then reduce to 140°C and keep basting until it reaches 85°C (a further 2½ to 3 hours). The meat will be meltingly tender and the skin deep golden and crisp. Save the rendered fat for roast potatoes.
Provenance: Aylesbury-Cross ducks, prized for their tender meat, full flavour and delicate golden fat. Raised in western Victoria in light, airy barns and fed a premium grain diet, with no added hormones, stimulants or antibiotics.
