This cut has been made famous by Argentinian barbeques. These meaty short ribs are richly marbled and have lots of connective tissue. They are cut on the perpendicular for maximum render and flavour.
Inspiration: We love to grill them over a high heat, particularly on our Pig & Pilgrim charcoal BBQ or low & slow which will help soften the connective tissue. Serve with our chimichurri to cut the richness with piquancy.
