At 1kg, this T-Bone is a serious occasion. The porterhouse and tenderloin in one cut, united by the bone, each side bringing its own character to the plate. Rich, buttery and deeply tender.
Defined by its signature yellow-hued fat and beautifully dispersed marbling, this Retired Dairy cow is shaped by years of slow, grass-fed grazing across the lush pastures of Gippsland, followed by an extended stay in our dry-ageing room. The result is something most people never get to taste.
We recommend consuming this product within 3 days. Not suitable for freezing due to the dry-ageing process.
Inspiration: Bring to room temperature 1hr before cooking. Season generously with salt and pepper. Heat a heavy-based pan with oil until very hot. Cook over high heat for 3 mins each side, then reduce heat and add a generous knob of butter, garlic and thyme. Cook for a further 3 mins on each side or to your liking. Rest for 5 -10 mins before carving. Serve with fries, our Bearnaise Sauce and a simple green salad.
