Called the "Superior Gold" or Directors cut of meat. The tenderloin and sirloin attached to the bone gives you a deeper flavour and tenderness in the meat.
Inspiration: The best way to have this is really caramelise the meat on each side and just medium-rare in the centre. Use a hot pan, or high heat on the BBQ, and give it 3 mins on each side, until you see that lovely rich depth of golden-brown crust, then turn down the heat, very low, and cook for 2 mins, or until your desired doneness. Rest for 5 mins, cover, and devour.
