The pork butt consists of parts of the neck, shoulder blade, and upper arm of the pig. The Boston butt gets its name simply from the fact that it is the wider end of the front shoulder. Butt is old English for “wide end” like the butt of a gun.
An excellent bone-in cut for smoking, it makes the most delicious pulled pork. It can be roasted, braised, stewed or used for making ground pork or sausages.
Provenance: Marque Pork sets the benchmark for premium Australian pork. These modern hybrid pigs (Duroc, Landrace, and Large White) are raised on farms located primarily in Gippsland, Victoria, and across the border in South Australia.
