This speciality cut is a lamb cutlet with an extra-long bone. Expertly trimmed by our master butchers with the delicious intercostal meat left on the bone for your flavour and dining pleasure.
Inspiration: For exquisitely pink meat with a deeply caramelised crust, heat a griddle pan over high heat until very hot. Brush the tomahawk with vegetable oil, season with salt, and sear for 2-3 mins on each side (it will depend on the thickness of the tomahawk). Remove from the pan and rest for 5 mins before serving.
