Did you know the word raclette is both the name of the cheese (semi-hard cheese made on both sides of the Swiss and French Alps) and the name of the dish itself (the melted cheese, typically eaten with potatoes, charcuterie & grilled vegetables).
Raclette is such a fun way of entertaining in Winter - who doesn't love melted cheese and it's so easy to prepare. All you need is:

- Cold Charcuterie - Ham, Prosciutto, Salami, Bresaola, Pastrami, Capocollo
- Grilled Vegetables & Boiled Potatoes
- Cornichons, Pickled Onions & Olives
- Raclette Grill.
If you're after a bigger meal you could also add sausages or slices of beef eye fillet.
The traditional way of serving raclette is heating the cheese on a special rack in front of an open fire. There aren’t too many open fires in Australia so a more conventional way is with a raclette grill but you can also use a non-stick frying pan to melt the cheese. A little less romantic but definitely does the job.
