Pork tenderloin, is lean, high flavour and has almost no fat - it is considered the supermodel of the pork cuts! And super easy to cook for a tasty meal in just 30 minutes in the oven.
Inspiration: Pat the pork dry then liberally season with salt and pepper. Pre-heat your oven to 200'C, and sear the pork on all sides first in a frying pan, so it is just golden. Then cook in the oven for a further 10 minutes. Allow it to rest in a warm place for 5-8 minutes before slicing into medallions and serving.
