Confit is an adored, age-old French dish traditionally prepared with duck. We have reimagined this dish in-house with a small selection of locally sourced geese, making this classic dish a decadent delight.
The legs are slow-cooked in duck fat until the meat is meltingly tender, then the skin crisped to golden perfection. It is simply delicious and effortless to cook.
Inspiration: Preheat your oven to 180'C. Place on a baking tray skin side down and reheat the confit goose for 20mins. Serve with mashed potatoes and our Red Wine Sauce or a side salad of a summery dish.
Provenance: Our geese are sourced through the leading and primary ethical farming producer in Victoria, with the highest certifications for animal welfare.
