For the record, sweetbreads are not sweet breads (you would be in the wrong shop!) but from the thymus or pancreas gland of a lamb. They are delicate in flavour, and have a soft and creamy texture.
Inspiration: sweetbreads are great as an entrée. Season and pan fry in a hot pan with olive oil until golden on all sides, deglaze at the end with a couple of teaspoons of sherry vinegar. Serve with braised Dupuy lentils and you will think you're in a Michelin starred restaurant!
