Christmas Leg Ham Traditional Wood Smoked - Half (Boneless) min 3kg
A half portion of ham can be the perfect size for some families and our butchers take the bone out for you to make it easier to carve. Our award winning hams have a smokey umami flavour from the beechwood chips, and our 3 stage smoking low and slow process. The meat is super soft, sweet-savoury and perfect for easy carving.
Inspiration: With the 3 stage smoking process the ham is already cooked and ready to be sliced. Half a ham is still a beautiful addition glazed at a table. For a glazed ham inspiration you can try a rich and delicious glaze that gets perfectly caramelized in the oven - in a small pot melt, 1/2 cup of butter, 1 cup brown sugar, 1/4 cup maple syrup, 1/2 cup apple cider, 1/2 teaspoon cinnamon, a pinch of nutmeg, and a couple of cloves. Baste the ham with the glaze, and cook at 160'C for 2 hours, and baste every 30 mins. YUM!
Provenance: For us, the process is simple, one leg, to one ham. We don't use any mixing, tumbling or additives. It is pure porky authentic, whole female leg with our own pickle recipe handed down over the generations. We apply a 3-stage smoke and rest process using the distinctive Victorian Mountain Ash wood chips which gives it the memorable smokey sweet flavour.
