Also known as Coulotte in the USA or Picanha in Brazil, the rump cap is prized for its generous cap of fat that renders beautifully when cooked — delivering deep, rich flavour and a golden, caramelised crust.
Inspiration: Rub the cap with a mix of 2 tbsp of crushed pink peppercorns and sea salt. This gives the meat a lovely rosy hue, a gentle heat and a striking crust.
