Introducing Margra Lamb – Australia's finest lamb. With its unique micro-marbling and unparalleled succulence, this lamb is sure to be the ultimate centerpiece. Also being wool free and lanolin free there is no game flavour. Just a delicate aroma and flavour.
The rump (also known as a chump cut) comes with a full white fat cap on and offers an accessible alternative to a lamb leg roast, while still looking extra special on the plate.
Inspiration: Oil, season or score to your preference. Bring to room temperature, the rump can be cooked at 180℃ for 35 - 40 minutes until the muscle reaches 60℃ and then rested delivering exemplary results. Add a side of our chimichurri sauce.
Provenance: Margra Lamb is bred specifically for chefs by the Gilmore family, third generation livestock breeders from Oberon, NSW. Together they have bred a quality of lamb seen only previously in Wagyu. Quite simply, it's lamb with no equal. Read more in our blog.
