Lamb shoulder is a flavourful and versatile cut of meat that's great for roasting, braising, or slow cooking. It's known for its rich marbling and tender meat, making it a favourite among chefs and home cooks alike.
Inspiration: For a delightful fall-of-the-bone lamb, bring the meat to room temperature before cooking and prick some small wedges of garlic into the meat, about 10 pieces over the whole shoulder is enough. Coat the meat with olive oil, salt, and pepper and roast covered in the oven for 2.5 to 3 hours at 150C. Enjoy this delicious moist lamb with roasted winter vegetables or a fresh Middle Eastern couscous salad .
Provenance: Margra Lamb is bred specifically for chefs by the Gilmore family, third generation livestock breeders from Oberon, NSW. Together they have bred a quality of lamb seen only previously in Wagyu, with a micro-marbled finish and low fat melting point of 28-35°C. Quite simply, it's lamb with no equal.
