Our homemade rolled pork loin, is stuffed with our Italian-inspired recipe of coarse pork mince, crushed fennel seeds, spices, and hints of sweet paprika.

Inspiration: For the best results, take the pork out of the bag, and dry the skin overnight. Then score the skin, and massage a handful of salt all over. You don't need oil on the pork. Preheat the oven at 220’C and cook for 25 mins, then turn down the temperature to 170’C and cook for 45 mins per kilo - this method will surely deliver the best kind of crunchy morish golden crackling.
