The foreshank cut of lamb is from the front leg of the lamb ideal for braising or slow-roasting preparations.

Inspiration: For comfort food on a winters night, bring out the lamb shank recipes! Toss the shanks in flour, and brown them off, then cook them in sautéed onion, garlic, celery, a fennel bulb, garlic, tomato paste, red wine and beef stock to cook slowly over 2 hours. Serve them with creamy mash potato, and caramelised Brussel sprouts or broccolini!

Provenance: Sourced from the principal network of prime grass-fed lamb farmers, who meet the criteria of ethically farmed practices and take care to minimise their impact on the environment.
